Whole Lamb Deposit 2025

This deposit reserves your Fall 2025 Lamb! 

Riverbed lambs are born in May and raised entirely on pasture until late November. Rotationally grazed, they get the best bites of pasture while fertilizing, trampling, and tending to the land here in the river valley. 

Cost breakdown:

$13/lb hanging weight

$135 processing fees (included in final cost)

Lambs slaughtered in the late fall are expected to weigh between 45-50 pounds hanging weight. This means you can expect to pay between $585-$650 (this includes processing fees). This cost may vary -  I’m happy to work with you on a budget if you want a smaller lamb! The final cost (minus the deposit) will be due at delivery or pick up. 

Lambs will be slaughtered and butchered at Odenthals in New Prague and will be custom cut to your specifications. You will fill out a form indicating your cut preferences closer to the butcher date. Once processed they can either be picked up on farm or delivered. 

What you can expect from a whole lamb:

20-30 lbs of meat - generally fits into an average freezer so no need for a chest freezer!

The Cuts!

  • Lamb chops

  • Leg of lamb roasts

  • Neck roast

  • Shoulder roasts

  • Lamb shanks

  • Rack of ribs

  • Stew meat

  • Ground lamb

Payment Options

To reserve your lamb please pay a $250 deposit - this covers the butcher fees and costs through the grazing season. Once lambs are processed you will be invoiced and the final cost will be due at delivery or pick up - this will be somewhere between $335-$400.
